Truffle Cake Recipe
Truffle cake will require some time and effort to make, but it will be a sure success.
Apart from the base, the main ingredient here will be the chocolate cream, which will be used for the filling and the glaze. And as the main ingredient for the cream will be the chocolate, it is crucial to use the best quality dark chocolate you can find.
Actually, if you love chocolate, but you’re not crazy about baking, you can skip the preparation for the base and use the cream with a small chocolate fountain (if you are a chocoholic I assume you own one).
Although it is not exactly a summer cake, it needs to be kept in the fridge to prevent the chocolate from softening. And, as a last thing, remember that it has high calorie content, so careful with the size of the slices!
Ingredients.
For the base
70gr (2½ oz) flour, sifted
75gr (2¾ oz) sugar
2tbsp cocoa powder, sifted
4 eggs
85gr (3 oz) butter, melted
For the filling:
450gr (1 lb) dark chocolate, chopped
6 egg yolks
75gr (2¾ oz) sugar
500 ml (2 pints) double cream
Mix the eggs with the sugar until bubbly, smooth and increased in volume. Add the flour and the cocoa, one tablespoon at the time, and the butter.
Preheat the oven at 180ºC (356ºF). Take a loose-bottomed 20cm (8in) cake tin, grease with butter and dust it with flour, and pour the mix. Bake for 25 minutes and set aside to cool.
In the meantime put chocolate and cream together in a casserole on a low heat. Keep on stirring until the chocolate has completely melted and the cream is smooth and with no lumps. Also, in a different pan, put together yolks and sugar and mix them on a very low heat until smooth. Put the two mixes together and give a good stir. When it’s at to room temperature put in the fridge for 30 minutes.
Take the base and cut it in two lengthwise. Spread half of the cream on it, put the second disc on top, and then use the remaining cream to cover the cake. Put in the fridge for five hours until it’s solidified.
